The hedonist is glad to present Chef Mohit Singh, a dedicated chef with a rich background in Japanese cuisine, cultivated through experiences in India and Japan, ex sous chef at Bangkok's Michelin-starred Inddee.
Specializing in Spanish and style grilling techniques, his journey Japanese culinary training at Tsuji Culinary Institute in Osaka, along with specialized training in blowfish processing. With professional highlights that include a tenure at Kikunoi Honten, a three Michelin-starred restaurant in Kyoto, and certifications in various culinary assessments, this chef excels in Japanese Kaiseki, wood and charcoal-based cooking, and fish butchery, delivering unique dining experiences.
We are happy to bring to you our Nagatsuki Kaiseki menu, a celebration of autumn and the month of September, by Chef Mohit Singh, Ex - Sous Chef at Inddee in Bangkok, which received its first Michelin Star in the year of its opening.
The menu harmoniously blends modern Japanese and traditional Indian culinary artistry using ingredients available during September in the two countries. It showcases a balance of colors and plating techniques, drawing from traditional kaiseki methods as well as New Age innovative approaches.
The Nagatsuki Kaiseki spread features the 5 techniques used in kaiseki – steaming, boiling, simmering, frying and grilling – to hit the perfect notes of umami. Each course highlights the finest seasonal ingredients, prepared with precision and care.
With this menu, we honor the beauty of seasonal change and the fusion of two great Asian culinary traditions.
