Introduction: 
Bafli (Mucuna pruriens) is a leguminous wild plant native to tropical forests and rural areas of Maharashtra. It has been traditionally used by tribal communities both as food and medicine. The beans and young pods are harvested and either fresh or preserved for seasonal use.

Bafli has a unique earthy, nutty flavor with a slight bitterness that mellows when cooked.

  • Flavour Profile: Earthy, slightly sweet with notes of parsnip and a hint of spice.

  • Texture: Firm and dense when preserved, softening beautifully when cooked.

  • Traditional Use: Often cooked as a vegetable (sabzi) or used in decoctions to treat digestive issues in traditional medicine.

Bafli Recipes:

Recipe 1: Bafli & Potato Gratin A rustic and hearty dish that showcases the earthy sweetness of Bafli.

  • Ingredients: Preserved Bafli slices, potatoes, heavy cream, garlic, nutmeg, salt, black pepper, and Gruyère cheese.

  • Method: Layer thinly sliced Bafli and potatoes in a baking dish. Pour a mixture of cream, garlic, and spices over the layers. Top with Gruyère and bake until golden and bubbly.

Recipe 2: Bafli & Lentil Stew (Dal) A comforting dal with a wild twist.

  • Ingredients: Toor dal (split pigeon peas), preserved Bafli chunks, ginger, turmeric, cumin seeds, mustard seeds, and curry leaves.

  • Method: Pressure cook the dal and bafli until tender. Prepare a tempering (tadka) with the spices and add it to the dal. Garnish with fresh coriander.

Recipe 3: Bafli & Coconut Chutney A unique chutney that balances sweet, savory, and spicy notes.

  • Ingredients: Preserved Bafli, fresh coconut, green chilies, tamarind pulp, and jaggery.
